Surprise Birthday Party; Dad 60th Birthday!!

This year, my dad turns 60! And my family decided to do something special for him! Like really surprise him for all the hard work, the love and all the effort he give, not only to us, but to all his brothers, sisters and the extended family!

Being the eldest at home lots of responsibility weighs down on him and having been through 3 years of struggles and doing his best to hold everyone together, we decided that it is finally time for him to celebrate; all the victory and success he had for the past 60 years of his life and to many more to come we pray.

More than a month before the actual day, we started planning and brainstorming on what we want to do and how to want to make it memorable for him. A month in we started deciding a date and working on our ideas!

We decided to invite the extended family together at Peach Garden Thomson to celebrate his special day! But of course it is a surprise, so he totally dont know what is going on and yup it totally shocked him! We when about booking the tables @ Peach Garden Thomson, ordering the designer cake from Pine Gardens to gathering everyone and trying our best to keep things under the cover!

On the day itself, we each take a role in ensuring things run smoothly and making sure that he is indeed surprise!!

From the photos we gather from the event, it was really priceless to see my dad smile like he never had in the past 3 years and to see how shock and surprise he is. My sis and I would give the world to keep him this happy the rest of his life!

And we indeed to pray that we have many more opportunity to do this for him and to gather the family like this! To more celebrations, love and happiness!

Enjoy the photos!

Turning 30; Stanley!

This year, Stanley turns 30! It is a special year for many as 30 is the year that we mark our achievements and also the year you get your IC photo change. At 30, you know that you are not a kid anymore, there is new responsibility and you are ready for the next chapter of life; whatever it may be.

Therefore, to make it extra special, I decided to really plan a good birthday for him; Staycation, Posh Dinner and Man U Jersey!

So, I planned a staycation @ Pan Pacific and took up the pacific escape deal; free parking, free wifi and free breakie @ Edge. Thus, on Saturday, Stanley took half day leave and we met up @ 1230p.m. and headed right down to Pan Pacific.

Lobby, filled with the CNY mood!

See through glass for the toilet.

Of course, the whole point of having a staycation is really to use the facilities of the hotel and also a chance to act like a tourist and explore the places we usually will not go! So we spent our day walking around the Marina Bay area and Town.

And when night falls, we headed to Millenia Walk and had our posh dinner there @ Murasaki Sushi. We had the gen set and it was really one of the best dinner we ever had! The sushi was what i told Stanley: "this is how sushi should taste like" and the Wagu beef was melt in your mouth out of the world!

Basically in one night, we tasted all the high-end food which we should try in our life. And we can't wait to have more of such experience together as we travel the world in the future.

Next day, we sleep in a bit before we head down for Breakfast Buffet @ Edge. Edge is a reputable place for buffet and of course their breakie selection is super wide and good! In fact too much to choose from!

After Breakfast, we headed to enjoy our room more! hahaha roll around in the huge bed before we have to pack and say good bye!

We had a great weekend like this and we will be looking forward to more!!

Cheesecakes Recipe

Been making mini cheesecakes for a while now and after a few tries, I can finally say that it is a dessert which i am confident making! Therefore, would love to share the recipe here for you to try!

The cheesecakes i make are mini cheesecakes (like cupcakes), I prefer making this due to the small serving and how cute they look!

The recipe!

The recipe shared can make about 12 to 16 mini cheesecakes!

Steps:

Start: Preheat the oven @ 170 degree C.

1. Use a food processor to blend and mix up the ingredients for the base; digestive biscuit, ground hazelnut, salt and melted butter (melt the butter with a microwave).

2. Press the blended base mix into mini cupcake cases, based on your preference you can choose to make it thicker or thinner! I prefer a thicker base!

Thick base!

The base taste a little salty which is a nice contrast from the sweet cheesecakes!

3. Put into the mixer Cream Cheese, sugar and vanilla extract. Mix till fluffy!

4. Add in Greek Yogurt and egg and mix well!

5. Add in the Vanilla cake mix slowly and mix well ensuring that there is no clump.

6. Once you have the cheesecake mix, fold in the sprinkle of your choice! You can choose rainbow sprinkle, hearts sprinkles and even party sprinkle depending on the season! I usually use hearts sprinkles, which also explain why the cheesecakes may be pinkish in colour, cause i mix in too long causing the colour to blend into the cheesecake mix. But if you just fold in then the colour will not affect the mix!

7. Pour the final cheesecake mix into the cupcake cases you prepared earlier, fill it up to 3/4 full and bake at 170 degree C for 20 min.

8. After baking, cool it on the cooling rack for 30 min before chilling it in the fridge for an hour!

Pinkish Cheesecakes!

9. To serve you can frost it with icing or like me simply frost it with Nutella!

End product! Great for Party!!

Hope you give this recipe a try! Cheers!
