Cheesecakes Recipe

Been making mini cheesecakes for a while now and after a few tries, I can finally say that it is a dessert which i am confident making! Therefore, would love to share the recipe here for you to try!

The cheesecakes i make are mini cheesecakes (like cupcakes), I prefer making this due to the small serving and how cute they look!

The recipe! 

The recipe shared can make about 12 to 16 mini cheesecakes! 

Steps: 

Start: Preheat the oven @ 170 degree C. 

1. Use a food processor to blend and mix up the ingredients for the base; digestive biscuit, ground hazelnut, salt and melted butter (melt the butter with a microwave). 

2. Press the blended base mix into mini cupcake cases, based on your preference you can choose to make it thicker or thinner! I prefer a thicker base! 

Thick base! 

The base taste a little salty which is a nice contrast from the sweet cheesecakes! 

3. Put into the mixer Cream Cheese, sugar and vanilla extract. Mix till fluffy! 

4. Add in Greek Yogurt and egg and mix well! 

5. Add in the Vanilla cake mix slowly and mix well ensuring that there is no clump. 

6. Once you have the cheesecake mix, fold in the sprinkle of your choice! You can choose rainbow sprinkle, hearts sprinkles and even party sprinkle depending on the season! I usually use hearts sprinkles, which also explain why the cheesecakes may be pinkish in colour, cause i mix in too long causing the colour to blend into the cheesecake mix. But if you just fold in then the colour will not affect the mix! 

7. Pour the final cheesecake mix into the cupcake cases you prepared earlier, fill it up to 3/4 full and bake at 170 degree C for 20 min. 

8. After baking, cool it on the cooling rack for 30 min before chilling it in the fridge for an hour! 

Pinkish Cheesecakes! 

9. To serve you can frost it with icing or like me simply frost it with Nutella! 

End product! Great for Party!!
