#ChefStanley

Having gotten our own place for more than 2 years and moving in to HGPV for more than 1.5 years now, we been very much settled into our married life and our routine of owning our own place! We love having a place of our own as it gives us a lot of freedom and personal space to just be us and grow as a couple.

On top of growing as a couple, Stanley been grow his interest of cooking as well and working on his little childhood dream of becoming a chef; he is not one, but he love being one. So he is my personal chef now, and I guess I am really blessed to have him!

So after a year of him cooking and me posting his food online; instagram and facebook. I decided to start a # for him; #chefstanley; to link him to his wonderful creations! He cooks about once to twice a week. So here is to share some of Chef Stanley wonderful yummy food!!

So here are the food he cooked in 2016 thus far! I know I am sooooooo blessed to have all this home cooked food from him! and I look forwards to many more home cooked meal by my loving #chefstanley for the many many years to come!

Cheesecakes Recipe

Been making mini cheesecakes for a while now and after a few tries, I can finally say that it is a dessert which i am confident making! Therefore, would love to share the recipe here for you to try!

The cheesecakes i make are mini cheesecakes (like cupcakes), I prefer making this due to the small serving and how cute they look!

The recipe! 

The recipe shared can make about 12 to 16 mini cheesecakes! 

Steps: 

Start: Preheat the oven @ 170 degree C. 

1. Use a food processor to blend and mix up the ingredients for the base; digestive biscuit, ground hazelnut, salt and melted butter (melt the butter with a microwave). 

2. Press the blended base mix into mini cupcake cases, based on your preference you can choose to make it thicker or thinner! I prefer a thicker base!

The base taste a little salty which is a nice contrast from the sweet cheesecakes! 

3. Put into the mixer Cream Cheese, sugar and vanilla extract. Mix till fluffy! 

4. Add in Greek Yogurt and egg and mix well! 

5. Add in the Vanilla cake mix slowly and mix well ensuring that there is no clump. 

6. Once you have the cheesecake mix, fold in the sprinkle of your choice! You can choose rainbow sprinkle, hearts sprinkles and even party sprinkle depending on the season! I usually use hearts sprinkles, which also explain why the cheesecakes may be pinkish in colour, cause i mix in too long causing the colour to blend into the cheesecake mix. But if you just fold in then the colour will not affect the mix! 

7. Pour the final cheesecake mix into the cupcake cases you prepared earlier, fill it up to 3/4 full and bake at 170 degree C for 20 min. 

8. After baking, cool it on the cooling rack for 30 min before chilling it in the fridge for an hour! 

Pinkish Cheesecakes! 

9. To serve you can frost it with icing or like me simply frost it with Nutella! 

End product! Great for Party!!

It feels GREAT to draw with CHALK!

The favorite features of our home is our chalk board wall! For those who had been there, and written on it knows how fun and interesting it is!

Stanley and I decided on having it as we wanted a creative feature for our place! So having the the chalk board wall was GREAT! 

We got the decal from TAOBAO, and DIY on our own the entire pasting process! It took us 2 Saturdays to totally finish it!

Since the wall, we had many friends and family who had came and sign on it, but as much as we wanna keep things the same, we decided to bring in some festive mood to the house by adding in Christmas Drawings to the wall! and for this we got our best pal in to help! My Forever Roomie Janice! 

So we googled for some inspiration and selected some designs to combine, and after some draft scribble on paper, we headed to the wall!

It's been more than 2 years!

Wow, it's been more than 2 years now!!!

When Stanley and I started the blog, it was simply to document our journey of getting our home and the route to our wedding, but as the blogging goes, we realize, we are able to help friends and even "strangers" in need and thus decided to continue to do it.

Unknowingly, it has been more than 2 years of blogging, and we are indeed glad to still be blogging! And we will continue to share bits and pieces of our life here; as a document of the key memories of our life and also as sharing to help others who may be in our shoes or who are going to places we been!

A little background to those who don't know us, Stanley and I met when we where studying in NTU, and it was through Freshmen Orientation Camp in Hall 7 that we meet. Our friendship grew and soon we were together. Looking back it has been almost 8 years and we are glad to be happily married, and still loving our adventures together!

Settling into HGPV!

After much moving and getting use to, we are finally settling into our new place. I guess what we really need to get use to was the new routine of getting up and going to work on time, ensuring that we are not late and all.

As i teach, I have to be in school by 7.10a.m. and i usually would wanna be a bit earlier. Stanley on the other hands works real far away and thus, the new place do post some new challenges to us.

But really, the pros of having our own place is really having our own time, besides the routine cleaning and all, which Stanley helps out a lot is also the time we get to cook dinner for ourselves with no one saying a single thing about it.

Furthermore, as our place is beside a park, walking in the park becomes our time to chill and just enjoys each other company.

Basically, I would say it is great to have our own place!
